Genevieve is Angelina’s sourdough starter.

Each packet of dried starter comes from the same living culture, dried so you can take a little piece of Genevieve home and bring her back to life in your own kitchen.

Your packet contains 14g / .5oz dried sourdough starter.

Day 1 - Rehydrate

Empty the entire packet into a clean jar (I like Weck)

Break up any larger pieces, then add:

28g warm water

about 80-85°f

stir well.

Let the starter sit for 2-4 hours, stirring occasionally, until the dried pieces have softened and begun to dissolve.

after soaking, add:

14g flour

stir until everything is well combined.

Cover the jar loosely and leave it at room temperature.

You may start to see bubbles within several hours, but don’t worry if it still looks quiet. Dried starter can take a little time to fully wake back up.

Next Feeding

Once you begin seeing bubbles or other signs of fermentation, add:

14g Water

14g Flour

stir well, cover loosely, and leave at room temperature again.

Keep Feeding

As your starter becomes more active, continue feeding her more regularly.

an easy feeding ratio is equal weights of:

starter + water + flour

for example:

30g starter

30g water

30g flour

before feeding, you can remove or discard some starter so the amount in your jar stays manageable.

When is she ready to bread?

She’s ready when she:

  • becomes bubbly after feeding

  • noticeably rises in the jar

  • smells pleasantly tangy and yeasty

  • reliably doubles in size after feedings.

Depending on the temperature of your kitchen, your flour, and your water, this may take a couple of feedings.

Dont rush her.

Keeping your starter

if you bake often, keep her at room temperature and feed her regularly.

if you bake occasionally, once she is fully active you can store her in the refrigerator.

When you’re ready to bake again, bring her out, feed her, and let her become bubbly and active before using.

A few helpful notes

Keep her warm, not hot.

a comfortably warm kitchen will help your starter become active faster.

Keep the lid loose

your starter is fermenting and producing gas, so don’t seal the jar tightly while she is active.

Flour Matters

all purpose or bread flour both work well. Whole wheat can sometimes help wake a sluggish starter.

Water matters too

if your tap is heavily chlorinated, filtered water may work better.

Be Patient

a dried starter may not look dramatic right away. give it time and continue feeding.
